Baked Salmon

2 cloves minced garlic
6 TBS light olive oil
1 tsp DRIED BASIL
1 tsp salt
1 tsp ground black pepper
1 TBS lemon juice
1tsp DRIED PARSLEY
2 – 6 oz salmon fillets

In a medium mixing bowl, whisk together the garlic, olive oil, basil, salt, pepper, lemon juice and parsley. Place the salmon fillets into a zip-lock bag or shallow glass dish. Cover with the marinade mixed above. Refrigerate for about one hour turning fillets partially through the time to evenly soak in marinade. Preheat oven to 375 F. Place fillets together on a large piece of aluminum foil and cover generously with marinade. Wrap securely and place into a glass baking dish. Bake 35 to 45 minutes until it easily flakes with a fork.

Variation: Grill in foil rather than bake.
