Curried Artichoke Rice Salad

½ cup uncooked white rice
1 tsp CHICKEN BASE
1/3 pound boneless cooked turkey
1/3 cup mayonnaise (light is okay)
1 ½ tsp CURRY POWDER
2 TBS sliced ripe olives
½ green pepper - julienned
2 green onions – sliced
1- 14 ounce can marinated artichokes – drained & halved

In medium saucepan, cook rice and chicken base in water. When rice is done, drain, rinse and cool before setting aside. Cut turkey into bite-size pieces. In small bowl, combine mayonnaise and curry powder. Combine rice and turkey with remaining ingredients. Mix well with mayonnaise/curry powder combination. Refrigerate to chill.
