Stuffed Mushrooms Sicilian Style

12 large, fresh stuffing mushrooms
¼ cup finely chopped onion
2 TBS finely chopped green pepper
1/3 cup SICILIAN BREAD CRUMBS
1 TBS soft margarine or butter OR olive oil
¼ cups diced pepperoni
1 ½ TBS fresh parmesan cheese (optional)
¼ tsp SEASONED SALT

Preheat oven to 350 F. Wash mushrooms removing stems. Finely chop stems. Dry caps on a paper towel before lining them cap-side down in a shallow baking dish. Saute butter/oil, stems, onion, pepperoni, and green pepper until tender. Add bread crumbs, cheese and seasoned salt mixing well. Mound into mushroom caps. Bake uncovered for 10-15 minutes until mushrooms are slightly tender and tops are brown.
