Tomato Cheese Melts
6 English muffins
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese
1/3 cup light mayonnaise (not Miracle Whip)
1 bunch green onions - cut up into green
2 tsp CURRY (regular or hot depending on your taste)
2 medium fresh tomatoes

Open the English muffins and place face up on a baking sheet under the broiler of your oven. Toast until muffins are toasty brown. Remove and lightly butter all 12 pieces. Mix mayonnaise and curry until blended. Add cheese and then onions and mix just until evenly distributed. Thinly slice tomatoes and blot them with paper towels before placing them on the buttered muffin halves. Evenly distribute the cheese mixture over tomatoes. Toast under the broiler until golden brown. Use a pizza cutter to cut into quarters. Serve as a hot appetizer OR with soup or salad for a luncheon party.
