Zucchini Bars

¾ cup butter, softened
½ cup granulated sugar
½ cup packed brown sugar
1 tsp baking soda
2 eggs
2 tsp vanilla
1 ¾ cups all-purpose flour
2 cups shredded zucchini
1 cup flaked coconut
¾ cup chopped walnuts
Icing
1 cup sifted powder sugar
1 TBS melted butter
1 tsp vanilla
½ tsp KORJINTE CINNAMON
2 – 3 tsp milk
Preheat the oven to 350 F. Grease a 15x10x1 inch baking pan. In a large bowl, cream softened butter, white sugar, brown sugar and baking soda until fluffy. Add eggs and vanilla beating on low speed until combined. Beat in flour. Stir in zucchini, coconut and walnuts. Spread mix into bottom of prepared pan. Bake 25-30 minutes, until an inserted toothpick comes out clean. Cool in pan on a wire rack.
FOR ICING: combine powdered sugar, melted butter, vanilla and cinnamon. Stir in enough milk to make icing easy to drizzle over cooled bars.
