Zucchini Bread
3 eggs
2 cups sugar
¾ cup vegetable oil
2 cups shredded zucchini
5 TBS vanilla
3 cups all-purpose flour
1TBS baking powder
2 tsp KORJINTE CINNAMON
1 tsp baking soda
1 TSP salt
½ cup raisins or chopped dates (optional)
Heat oven to 350 F. Grease and flour two 9x5x3 inch loaf pans. In mixing bowl, beat eggs until foamy. Beat in sugar, oil and vanilla. Stir in zucchini. Stir in dry ingredients and dried fruit. Pour batter into prepared pans. Bake about 55 minutes before checking with a knife in the center of the bread. Usually requires 10 minutes baking after that before checking again. Cool in pans for five minutes before removing and placing on racks.
