Zucchini Stir Up

1 TBS butter
3 TBS olive oil
1 large onion – chopped OR 10 green onions- chopped OR 2 leeks – sliced
2 medium green zucchini – sliced ¼ to ½ inch thick
2 medium yellow zucchini – sliced ¼ to ½ inch thick
1 medium red bell paper – chopped
1 TBS GARLIC AND HERB PEPPER
Salt and pepper to taste

Melt the butter in a heavy skillet before adding the olive oil and onion. Cook for about 5 minutes until onion starts to soften. Add zucchini, and pepper to the mix. Sprinkle with salt, pepper and Garlic and Herb Pepper. Simmer uncovered until zucchini is tender – about 20 minutes. Do not over cook.
