Apple Almond Bars

Crust and Crumble
2 cups all-purpose flour
½ cup sugar
½ tsp baking powder
½ tsp salt
1 cup cold butter
2 egg yolks, slightly beaten
½ cup sliced almonds
Fruit Layer
¾ cups sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
¼ tsp ground nutmeg
4 medium cooking apples, peeled, cored and sliced (4 cups)
Preheat the oven to 350 F. In a large bowl, mix together 2 cups flour, ½ cup sugar, baking powder and salt. Cut in butter until pieces are pea-size. Stir in egg-yolks and almonds with a fork. Press half of the mix, about two cups, into the bottom of a 13x9x2 inch baking dish.
In a separate bowl, mix together ¾ cups sugar, ¼ cup flour, cinnamon and nutmeg. Add apples tossing gently to coat with mix. Arrange evenly over the layer in the pan. Sprinkle with remaining crumble mix. Bake 35 minutes until topping is golden. Cool in pan on a wire rack. Drizzle with icing (see recipe below). Cut into bars when cool.
Icing: In a small bowl mix ¾ sifted powdered sugar, 1 TBS milk and ¼ tsp almond extract until smooth.
