Apple Cake

12-16 servings

Cake
1 ½ cups vegetable or canola oil
2 cups sugar
2 eggs
3 cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 tsp APPLE PIE SPICE
3 cups diced apples
1 tsp vanilla
1 cup chopped walnuts

Glaze
1 cup buttermilk
1/2 cup butter
1 cup sugar
½ tsp vanilla
½ tsp baking soda

Heat oven to 325 F. Grease 9x13x2 inch pan. In a large bowl, combine oil, sugar and eggs. In a separate bowl, combine flour, baking soda, salt and APPLE PIE SPICE. Add to oil mixture blending well. Fold in apples, vanilla and nuts. Bake about 50-60 minutes until toothpick comes out clean.

For glaze: combine all ingredients into a large saucepan. Heat to boiling. Boil for 2 minutes. Cool 10 minutes then pour over cake.
