Bacon, Spinach and Swiss Quiche
9” Pie crust – make it easy on yourself and buy one ready-made
6 large eggs
1 ½ cup half-and-half
1 TBS California Garlic Pepper
1 cup finely shredded Swiss cheese
8-10 slices of bacon – crumbled
1 – 1 ½ cup fresh chopped spinach
Heat oven to 375.
Put crust into pie plate and set aside. Whisk eggs, half-n-half and spice. Layer ingredients into pie crust in this order: bacon, spinach, cheese, egg mixture. Bake 35-45 minutes until set and brown. Allow to set for 5-10 minutes before cutting. For extra kick, sprinkle with California Garlic Pepper before serving.
INGREDIENT TWIST: Replace the California Garlic Pepper with 1 tsp of Korjinte cinnamon and use maple flavored bacon. Lightly sprinkle the top with cinnamon also.
COOKING NOTE: Quiche can be partially baked ahead of time and frozen or refrigerated for later use. Also, it makes GREAT leftovers. It tends to be better the second and even third time around.
