Fruit Crumble

1 ½ - 2 pounds of your favorite frozen fruit (blueberries, raspberries, strawberries, peaches, rhubarb, cranberries)
granulated white sugar

In a medium-sized bowl, lightly coat frozen fruit with sugar. The amount you use will depend on the fruit. Rhubarb and cranberries, for example, are a bit sour and will require more sugar. Set the fruit aside to defrost. Do not drain the liquid.

Crumble
2 cups regular oatmeal
2 cups brown sugar
1 cup flour
3 tsp Korintje cinnamon
½ cup (maybe more or less) apple juice

Mix oatmeal, brown sugar, flour and cinnamon. Gradually add the apple juice stirring to form small clumps from the mix. More or less may be used to create this effect. Into the bottom of an 8” square baking pan (or 9” pie pan) press half of the oatmeal mix. Layer the fruit, including the juice on top of this mix. Cover the top of the fruit with the remaining mix.

SERVING SUGGESTIONS:
1. Serve warm with cold cream.
2. Serve warm or cold with low-fat vanilla yogurt. Consider layers in a dish like a parfait for a fancy dessert.
3. Try serving for breakfast treat.
