Turkey Chili
1 – 1 ¼ pound ground turkey
2 cups chopped white onions (about 2 large)
¼ cup water
2 cloves minced garlic
1 - 15 ounce can tomato sauce
1 – 14 ½ ounce can no-salt-added diced tomatoes with juices
1 cup water
1 TBS chili powder
1 tsp ground cumin
½ tsp sugar
1 – 15 ounce can pinto beans; rinsed and drained
1 cup frozen whole kernel corn
Garnish options: shredded cheddar or Monterey jack cheese, chopped onion, low-fat sour cream, corn or taco chips. In a saucepan, brown turkey; drain. Add onion, ¼ cup water and garlic. Cook for five minutes over medium heat stirring often. Stir in tomato sauce, diced tomatoes, 1 cup water, chili powder, cumin and sugar. Bring to a boil then reduce heat. Cover and simmer for 20 minutes stirring occasionally. Stir in beans and corn. Return to boil, reduce heat, cover and simmer for 10 more minutes stirring occasionally.
Serve with favorite garnishes.
