Cinnamon Roll Cheesecake

My husband and I got married about two years ago and we've both always love cinnamon and sugar desserts.

Ingredients
  

  • Crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ tsp ground cinnamon
  • 6 tbsp melted butter
  • 🍰 Cheesecake Batter:
  • 22 oz cream cheese (save 2 oz for the icing)
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • Cinnamon Sugar Crumble:
  • ⅓ cup brown sugar
  • 1 ½ tsp ground cinnamon
  • 2 tbsp flour
  • 2 tbsp melted butter
  • 🍯 Cinnamon Roll Icing:
  • 2 oz cream cheese
  • 1 tbsp butter, softened
  • ½ cup powdered sugar
  • 1–2 tbsp milk (to thin)
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon

Instructions
 

  • 1. Prepare the crust
  • Preheat oven to 325°F (163°C).
  • Mix graham cracker crumbs, sugar, cinnamon, and melted butter.
  • Press firmly into the bottom of a 9-inch springform pan.
  • Bake 8–10 minutes, then set aside to cool slightly.
  • 2. Make the cheesecake batter
  • Beat the 22 oz cream cheese and sugar until smooth and fluffy (2–3 minutes).
  • Add eggs one at a time, mixing just until combined.
  • Mix in vanilla and sour cream until smooth.
  • 3. Make the cinnamon crumble
  • Stir together brown sugar, cinnamon, flour, and melted butter until crumbly.
  • 4. Assemble the layers
  • Pour half the cheesecake batter over the crust.
  • Sprinkle half of the cinnamon crumble evenly over it.
  • Add the remaining batter, then the rest of the crumble on top.
  • 5. Bake
  • Bake 55–65 minutes, or until the center is mostly set but still slightly wobbly.
  • Turn off the oven, crack the door open, and let the cheesecake rest inside for 1 hour.
  • Remove and cool completely, then refrigerate at least 4 hours or overnight.
  • 6. Make the icing
  • Beat the 2 oz cream cheese, butter, powdered sugar, milk, vanilla, and cinnamon until smooth and pipeable.
  • Pipe or drizzle in a swirl pattern on top of the chilled cheesecake to mimic a cinnamon roll.

This recipe is inspired by a social media creator but is my own version of it. It is now a birthday tradition to have it as the dessert for birthdays!
