

Homestyle Chicken Curry
It is my cherished memory of my father's cooking, and I appreciate them even more by preparing it for my family & friends after marriage.
Ingredients
- - 1.5 kg whole chicken, cleaned, washed, and dried
- - 3 medium red onions, sliced
- - 2 tbsp ginger-garlic-chilli paste
- - 250 ml cooking oil
- - 1/2 tbsp red chilli powder
- - 1 tbsp cumin powder
- - 1 tbsp coriander powder
- - 1 tsp black pepper
- - Salt, to taste
- - 2 bay leaves
- - 1-2 dry red chillies
- - 1 tsp black cumin seeds
- - 1 tbsp cilantro, chopped
- - 1 cup boiled water
- -Special
- Whole garam masala paste (see below)
- Whole Garam Masala Paste grind it with water to smooth consistency
- - 1 big cardamom
- - 4 green cardamoms
- - 4 cloves
- - 1″ cinnamon
- - 1 tsp roasted coriander seeds
- - 1 tsp mace
Instructions
- 1 .Heat Cooking oil in a deep pan , Add bay leaves, black cumin seeds, and dry red chillies.
- 2. Add sliced onions and sauté until pink.
- 3. Add ginger-garlic-chilli paste and cook until raw aroma goes.
- 4. Add chicken and sauté for 5 minutes.
- 5. Add all spices,and salt. Cook until it starts leaving oil.
- 6. Once chicken is almost cooked, add whole garam masala paste. Cook until it gives a nice aroma.
- 7. Add boiled water to get a nice consistency.
- 8. Finally, add chopped cilantro and boil for 10-12 minutes. Turn off heat.
- *Tips:*
- - Adjust spice level according to your taste.
- - Use boiled water for gravy.
- - Serve with steamed rice or Flatbread.
Notes
The fact that he prepared it for the entire family every weekend or on special occasions speaks volumes about his love and dedication to uniting us through cuisine.It is praiseworthy that I am preserving these family traditions and recipes.
