Hot Dill Potato Salad
I got this recipe from a fellow soldier’s wife when we were stationed in Berlin, Germany in the early 1980’s.
Ingredients
- 4 cups cooked diced potatoes
- 1 T. Butter
- 1 T. Flour
- 1 tsp. Salt
- 1/4 tsp. Black Pepper
- 1/4 tsp. Dill Weed
- 2 T. Finely chopped Onion
- 1 cup Milk
- 1/2 cup Mayonnaise or Salad Dressing
Instructions
- In a saucepan, melt butter over low heat. Stir in flour, pepper, salt, and dill weed. Add milk, cook and stir until thickened and bubbly. Blend in mayonnaise and onion. Fold in potatoes. Spoon into a serving dish. Serve immediately. Serves 4-6
Notes
I’ve loved it and served it many times over the years. In turn, I shared this recipe with another soldier’s wife while stationed at Ft. Leonardwood, Missouri. A while back, I heard from her, and she shared this recipe as well, and told me that whenever she makes this recipe, she thinks of me.
