Moms Albondigas Soup

This recipe was my moms original master pieces perfect for winter day. She learned to make this from a hotel line cook at the time in the 1970s it has been a hit since then

Ingredients
  

  • 2 tbl butter
  • 2 carrots washed and sliced
  • 3 stalks celery washed, trimmed and diced
  • 1 onion chopped
  • 1 orange bell pepper seeded and diced
  • 1 tsp cilantro lime seasoning
  • 5 cans campbells beef consumme or French onion soup
  • 6 cups water
  • 1 cup v8 or bloody Mary juice
  • 1/2 green cabbage finely shredded
  • 1 bag frozen meatballs

Instructions
 

  • In a large stockpot melt butter once hot add carrots and celery cook 10 minutes then add onion and bell pepper along with cilantro lime seasoning cook until translucent then add beef consumme, water and bloody Mary or V8 bring it to a boil at end of cooking time add meatballs and cabbage at last minutes of cooking ladle into mugs volia
