Montoya Family Chili

With family from New Mexico this is our traditional family chili. I use New Mexico red chili powder when I have it and it makes all the difference. But you can use Chili powder from Sugar 'N Spice and it works fine.

Ingredients
  

  • 1 lb Ground Beef
  • 1 Can Crushed Tomatoes
  • 1 White Onion (Diced)
  • 1 Bell Pepper (red, orange, yellow)
  • 3 Large Cloves Fresh Garlic
  • 1 Can Kidney Beans with juice
  • .5 cups Beef Stock
  • Tomato Paste as needed to thicken
  • 2 Tbs Olive Oil
  • 1.5 Tbs Cumin
  • 2.5 Tbs New Mexico Chili Powder or regular chili powder
  • 2Tbs Paprika
  • .5 tsp Red Chili Flakes
  • Salt and pepper to taste
  • Optional:
  • Avocado
  • Cilantro
  • Sour Cream
  • Fine Diced Onion

Instructions
 

  • Dice onions, peppers and garlic to small dice.
  • Preheat the pan with olive oil.
  • Add cumin and stir constantly for 1 minute.
  • Add beef to pan and brown fully.
  • With a generous pinch of salt season the cooked beef.
  • Add the rest of the spices to beef and cook briefly.
  • Add vegetables and deglace pan.
  • Cook until veggies are soft and translucent.
  • Add crushed tomatoes and cook to a simmer.
  • Add beans, again cook to a simmer.
  • Added measured beef stock
  • Add tomato paste to achieve desired consistency.
  • Simmer for 30 minutes or until all ingredients make friends.
  • Top with optional toppings.
  • Enjoy with cornbread.
