

Potato Soup
This is a recipe my German Grandma made, and now one of my family's favorites!
Ingredients
- 4 medium potatoes, peeled & diced
- 2 strips bacon, diced
- 1 stalk celery, diced
- 1/2 of a medium onion, diced
- 1 medium carrot, diced
- 4 whole peppercorns
- 4 whole allspice
- 4 whole cloves
- 2 bay leaves
- 1/3 of a stick of cinnamon
- 1 tsp parsley flakes
- 1 cup heavy cream or whipping cream
- salt & pepper to taste
- 8 cups water
- 2 TBS flour + water to make a roux
Instructions
- Peel & diced potatoes, set aside. Brown bacon in a soup pot, then add diced celery, onions and carrots, sauce until veggies are translucent. Put spices in a tea ball or cheesecloth sack and add along with the potatoes. Bring to a boil, turn burner to medium and cook until potatoes are soft, approx. 30 minutes. Mix flour and water to make roux, remove spices, bring soup to a boil again, stir in roux to thicken. Add salt & pepper to taste and parsley flakes. Add cream just before serving.
Notes
She never used a recipe, so I made a trip back to North Dakota to have her cook all our favorite German foods so I could watch her prepare them and write down how she did it. I had to guess at amounts on the ingredients, but I have now perfected this recipe, and it is one of my family's favorites!
