
Sweet Potato Cheesecake Cookies
This is a recipe ves a cakey, pillowy, and soft sweet potato flavored cookie.
Ingredients
- Sweet Potato Cookies
- -Two Sticks of Unsalted Butter, Soft
- -1 cup brown sugar
- -1/2 cup white sugar
- -3 large eggs
- -1 tsp baking powder
- -1/2 tsp baking soda
- -1 tsp salt
- -1 tbsp vanilla bean paste
- -3/4 tsp cinnamon
- -1/4 tsp ginger
- -1/4 tsp nutmeg
- -1/4 tsp cloves
- -2 cups all purpose flour
- Cheesecake Filling
- -8oz cream cheese, soft
- -1/2 cup powdered sugar
- -1tbsp vanilla bean paste
- -1/4 heavy cream
- Pecan Streusel
- -1 cup of roughly chopped Pecans
- -1/2 cup of brown Sugar
- -4 tsp melted unsalted butter
- -3/4 tsp cinnamon
Instructions
- Sweet Potato Cookie
- - Preheat oven to 350 degrees Fahrenheit
- - Cream the softened butter with the sugars until fluffy
- - After creaming add the eggs 1 at a time
- - After all the eggs have been incorporated add the baking powder, baking soda, salt, vanilla paste, and all the spices. Then mix
- - After that add the flour and mix
- -let the dough rest in the fridge for 30 minutes
- Cheesecake filling
- - Mix the softened cream cheese with the powdered sugar
- -After mixed add the vanilla paste and the heavy cream
- -After that has been incorporated set in the fridge until firm enough to scoop
- Pecan Streusel
- -Combine the pecans, melted butter, brown sugar, and cinnamon in a bowl.
- -After the dough has chilled, scoop the cookie dough on a baking sheet. ( use whatever sized scoop you want)
- -Then scoop a bit of the cheesecake filling into the center of each cookie
- -Then top with another scoop of cookie dough
- -Finally sprinkle the pecan streusel on top of the cookie
- -Place in 350 degree Fahrenheit oven bake for around 12 minutes according to your cookie size. For larger cookies it'll take around 12-17 minutes to bakes. For smaller cookies 10-12 minutes.
- - After baking cool in pan for 3 minutes then transfer to cooling rack. Then enjoy
