

Zing Refresh Spiced Superfood Bites
The flavor is rooted in my Caribbean heritage, specifically the comforting, warming spice profile of my mother's traditional rum cake.
Ingredients
- 1 cup Pitted Medjool Dates
- 1 cup Pumpkin Seeds (Raw)
- 1 cup Mung Beans (Freshly Sprouted)
- 1/2 cup Mixed Microgreens (Packed) (Clover, Broccoli, Radish, Mustard, Arugula)
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1/4 teaspoon Ground Clove
- 1 teaspoon Pure Vanilla Extract
- 1 pinch Salt (optional)
Instructions
- 1. Process Seeds/Beans:** Add the raw pumpkin seeds and fresh mung beans to a high-speed food processor and pulse until a coarse meal is formed. Set aside. Do not over-process.
- 2. Blend Binder: Add the dates, microgreens, vanilla extract, cinnamon, nutmeg, clove, and salt to the food processor. Process until a thick, uniform paste forms, scraping down the sides as needed.
- 3. Combine: Add the prepared seed/bean mixture back into the food processor. Process briefly, just until the mixture is fully combined and sticky enough to hold its shape when pressed.
- 4. Form & Set: Roll the mixture into small, uniform, bite-sized balls (approximately 20 grams or 0.7 ounces each). Place the formed bites on parchment paper and chill for at least 30 minutes to firm up before serving.
