Spanish Paprika Seafood Paella

Ingredients
  

  • 2 Tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup Arborio or Bomba rice
  • 1/2 tsp smoked paprika
  • 2 cups seafood broth
  • 1/4 tsp saffron threads optional
  • 1 bay leaf
  • 1 cup shrimp peeled and deveined
  • 1 cup mussels or clams
  • 1/2 cup peas
  • Lemon wedges parsley (garnish)

Instructions
 

  • Heat oil in a large skillet or paella pan. Sauté onion and garlic until soft.
  • Stir in rice and smoked paprika. Toast 1–2 minutes.
  • Add broth, saffron, and bay leaf. Bring to boil.
  • Reduce heat to low, cover, and simmer 15 minutes.
  • Add seafood and peas; cook 10 minutes until seafood is cooked through.
  • Let rest 5 minutes. Garnish with lemon and parsley.
