
Vegan Indian Spiced Chickpea Curry

Ingredients
- 1 can 15 oz chickpeas, drained
- 1 onion chopped
- 2 cloves garlic minced
- 1 Tbsp oil
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1 can 14 oz coconut milk
- 1 cup diced tomatoes
- Salt to taste
Instructions
- Heat oil in a skillet. Sauté onion and garlic.
- Add spices, stir 1 min.
- Add chickpeas, tomatoes, and coconut milk. Simmer 15–20 min.
- Season with salt. Serve over rice.
