Indian Turmeric Lentil Dal

Ingredients
  

  • 1 cup red lentils
  • 3 cups water or vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tomato diced
  • 1 Tbsp oil or ghee vegan if preferred
  • Salt to taste
  • Cilantro garnish

Instructions
 

  • Rinse lentils under cold water.
  • In a pot, heat oil. Sauté onion, garlic, cumin, and turmeric until fragrant.
  • Add lentils, tomato, and water. Bring to boil.
  • Reduce heat, simmer uncovered 20–25 minutes until lentils are soft.
  • Add salt to taste and garnish with cilantro.
